What do you mean you brew beer? Isn't that illegal?

The answer, of course, is no. Not only is it legal, it's a lot of fun! The only caveat being that you don't sell what you make without a license. So that's what we'll be doing--acquiring a license, and brewing lots of delicious beer.
We will be brewing beer that is a mix of British and German techniques. Beyond the basic brewing technique, this means reimagining traditional styles by substituting different grains or hop varieties or even a different yeast strain. This seems like a great idea for a future post on how different ingredients impact the flavor of the beer. Someone remind to do this later.

A big trend these days is integrating local flavors and ingredients from a brewery's area. Well we know a good idea when we taste one, so I'll be putting my not so inconsiderable experience in using unconventional and local ingredients to giving our brews local character whenever possible. We are working to develop a spectrum of beer, ranging from stouts and porters, to reds and Dunkles, to Kölsch and pale ales, to fruit infused beers. I just read that out loud for the first time; quite a mouthful. One of the beers we're really excited about is going to be nitrogenated. You'll have to stay tuned to find out more. I hesitate to be labeled a sour brewer again, so specialty sour ales will be introduced at irregular intervals. Or as inspiration strikes me.
Eventually we would like to purchase the equipment to brew lagers (from Pilsner and Oktoberfest style beers to doppelbocks). This is a great opportunity to brew unconventional beers. Most people have a dim view of lagers, I want to brew some that even my professional brewing mentor would be surprised by; and he practically hated Pilsners.
We’ll also be collecting used oak barrels to start an aging program. Some beers coming out of this program will be clean, no sour flavors, and others will be used to make complex and delicious sour aged delicacies. So, let us know if you hear of any spirit or wine producers looking to sell or gift their used barrels.
As we get closer to opening day, I'll be teasing you folks with some of the beers we've been developing. For now I'll leave you with a beautiful spectrum of nearly finalized recipes.
